January 25th is Robert Burns Day. Around the world, those who celebrate join together for a Burns Supper centered around haggis. This Scottish delicacy is a savory pudding of sheep organs (heart, liver, and lungs) that’s traditionally boiled inside a sheep’s stomach.
It’s not for everyone. Which is why I’ve made a vegetarian version with lentils. It was a family favorite even for our toddler!
For Burns Supper, you have to include some good sides — neeps (turnips), tatties (mashed potatoes), and/or cabbage. Some Scotch broth works well too.
A Burns Supper is not complete without some scotch, perhaps some readings of Burns’s poetry, or at the very least, an Ode to the Haggis.
Even if you are not Scottish, it’s a good opportunity to come together with those you love and celebrate family and friends. We must cherish each other while we’re still here.
